Tips For Making This Recipe

Be sure to line your pan with foil. This will make cleanup much, much easier. There will be bacon grease and chicken juices dripping through your rack and baking onto the pan, so foil will save you from having to try and scrape that all off.

Choose thin bacon as it will crisp up. Thick bacon just won’t get the same results, and will result in soggy bacon on your chicken.

Putting a rack under your chicken is also very important as it keeps the chicken and bacon out of the grease. If it is just sitting in the pan, it will not crisp up on the bottom.

Ingredients

  • 4 6- oz. boneless skinless chicken breasts
  • 2 teaspoon garlic powder
  • 2 teaspoon brown sugar
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground pepper
  • ~9 pieces bacon thin-cut

Instructions

  • First, preheat the toaster oven to 400ºF
  • Line a baking sheet with tin foil. Place a wire rack on top and set it aside.
  • Combine and grind all of the spices, place into a small bowl.
  • Season each chicken breast with 1 teaspoon of chicken seasoning, making sure to get both sides. Save the remaining spices for later.
  • Wrap each chicken breast with 2 to 3 pieces of bacon depending on their size. Start at one end and move to the other. Place each bacon wrapped chicken breast to the wire rack as you finish.
  • Sprinkle the tops of the chicken breasts with the remaining seasoning.
  • Bake chicken breasts at 400ºF for around 20-25 minutes. Then, turn the heat up to 450ºF and bake for 5-10 more until the bacon is crispy. The internal temperature of the chicken should be at least 165ºF and the bacon should be fully cooked.

Notes

Thin-cut bacon will give you the crispiest results. Thick-cut bacon won’t work very well at all. 
This recipe is scaled for a toaster oven, but you can do it in a regular oven as well, just use a bigger pan and scale accordingly. 
The wire rack is essential for getting crispy bacon. If you don’t use one, the bacon on the bottom will stay soggy and not yummy.
