Garlic Butter Mushroom Pork Chops Recipe
An easy but incredibly flavorful recipe that combines mushrooms, garlic, and pork chops to make a delicious main dish.

Ingredients
- 2 bone-in pork chops
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoon olive oil
- 8 tablespoons unsalted butter divided
- 1 pound # Bella mushrooms sliced
- 6 cloves garlic minced
- 1 tablespoon flour
- 1/2 cup water or chicken stock
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1/2 teaspoon smoked paprika
Instructions
- Season pork chops on both sides with salt and pepper.
- Sear pork chops on each side for 3 to 4 minutes, until golden brown. Check the internal temperature. It should be at least 140℉.
- Remove pork chops onto a plate and set aside.
- Place 8 tablespoons of butter in the skillet and let melt. Add garlic and mushrooms. Season with salt, pepper and paprika. Saute to your liking, stirring often.
- Add the flour, stir in and cook 1-2 minutes.
- Add chicken stock to skillet and scrape all of the browned bits from the bottom of the pan. Allow to cook until the sauce starts to thicken.
- Return pork chops to skillet. Coat with sauce and simmer everything together for 2 to 3 minutes.

- Large Skillet – You will want lots of room to work so use a 12″ cast iron skillet or saintless steel pan like the American Kitchen skillet that I use and love.
- Turner – I have my old spring steel turner, but you can’t get that so any good quality turner will work.
- Measuring Cup – My go-to measuring cup for a cup or more is a good old Pyrex measuring cup.

- pork chops – The standard meat to use is bone-in pork chops, but I like pork blade steaks better
- mushrooms – Any work, I used baby Bella mushrooms.
- garlic – I recommend using fresh garlic bulbs. Mince or chop them finely.
- chicken stock – Needed to deglaze the pan, my preferred is organic Better Than Bullion
- butter and bacon grease – My go-to combo for frying. It allows the chops and mushrooms to brown nicely and gives it excellent flavor.
How To Cook Garlic Mushroom Pork Chops
- To start, heat up olive oil in a skillet.
- Season pork chops with salt and pepper on both sides.
- Cook each side for 3 to 4 minutes, or until golden brown. Check the temperature to make sure the pork chops are cooked through. Remove chops onto a plate and set aside.
- Add butter to skillet and melt. Add garlic and mushrooms. Season with salt, pepper, and smoked paprika.
- Cook your mushrooms until they are reach your desired doneness.
- Add the flour, mix in well, and cook 1-2 minutes.
- Add in chicken stock or water and cook until the sauce starts to thicken.
- Add the pork chops back to skillet. Simmer for 2 to 3 minutes.
- Serve pork chops with mashed or roasted potatoes or other vegetables.
What pork chops work best with this recipe?
In my book, pork steaks or pork blade steaks are the best for this recipe, but they are not super common. You can use regular bone in pork chops, just be sure to not overcook them. Use an instant-read digital thermometer and keep a close eye on them as you cook them, particularly at the very end.
