Ingredients

  • 1 lb ground turkey lean, 93% or higher
  • 2 tbsp olive oil
  • 1 can diced or crushed canned tomatoes (no sugar added)
  • 8 cups fresh spinach chopped
  • 1 cup yellow onion diced
  • 2 tsp garlic powder
  • 1 tsp smoked paprika optional
  • Salt and pepper to taste
  • 3-4 tbsp water or veggie broth to deglaze

Instructions

  • Heat a nonstick skillet over medium heat. Add the ground turkey and oil. Cook, breaking it up with a spoon, until browned and nearly cooked through (about 5-7 minutes).
  • Add the diced onion and cook for 2-3 minutes until softened.
  • Stir in the canned tomatoes, garlic powder, smoked paprika (if using), salt, and pepper. Let it simmer for 2 minutes—the tomatoes will reduce slightly.
  • Add the spinach and water or broth. Stir until the spinach wilts down (about 1-2 minutes), coating it in the turkey-tomato mix.
  • Remove from heat and serve hot.

This is a very simple recipe and you need very little in the way of tools.

Instructions

Start by heating a skillet over medium heat. Once hot, add the oil and the turkey. Cook the turkey, breaking it up as you do, until browned and nearly cooked through. This should take about 5-6 minutes.

At this point add in the diced onions, mix and cook 2-3 minutes more, stirring occasionally.

Next add in the can of diced or crushed tomatoes, along with their juice, along with the garlic powder, smoked paprika, salt and pepper. Let this simmer over medium heat for 3-5 minutes.

Lastly, stir in the chopped spinach and water or broth. Cook 1-2 minutes, stirring intermittently until the spinach is wilted and cooked down to where you like it.

Remove from the heat and serve hot!
