Beefy Cheesy Low Carb Taco Casserole

This recipe came about because I was looking or an easy Mexican-style casserole that didn’t have any corn in it. I found a recipe titled “Easy Cheesy Low Carb Taco Casserole” but it needed some modifications. This recipe is the result.

Is This Casserole Low Carb or Keto?

The original version of this recipe had this as a keto cheesy low-carb taco casserole, with only 4 grams of carbs per serving. My analysis of my version of this recipe puts it as marginal keto with 5-10 grams of carbs per serving. If you use keto-friendly seasoning, it should count as keto.

Use Parchment Paper For Easy Cleanup

Ingredients

Taco ground beef

  • 1/2 onion diced
  • 1/2 bell pepper diced
  • 1 cloves garlic minced
  • 2 lb ground beef
  • 3 tablespoon taco seasoning
  • 2 tbsp Double tomato paste
  • 3 slices of jalepenos chopped and optional

Cheese sauce

  • 2 eggs – medium
  • 2 cups shredded/grated cheese divided
  • ½ cup heavy whipping cream

Instructions

  • Preheat your oven to 350°F/180°C
  • Add the onions, bell pepper, garlic, and ground beef to a large skillet on the stove. Cook on medium high heat until the beef has browned. Use your spatula to break the beef into bite-sized pieces.

  • While your meat is cooking, in a bowl mix together the eggs, cream, and half your cheese.
    2 eggs – medium, ½ cup heavy whipping cream, 2 cups shredded/grated cheese
  • Mix in the taco seasoning, tomato paste, and jalepeno. Stir to combine, then pour the meat into your casserole pan. Spread it out so that it covers the bottom of the pan.
    3 tablespoon taco seasoning, 2 tbsp Double tomato paste, 3 slices of jalepenos
  • Pour the cream and cheese mixture over the beef and spread it out with a spatula or spoon. Sprinkle the remaining cheese over the top.
    2 cups shredded/grated cheese
  • Bake your taco casserole uncovered on the top rack for 15-17 minutes in the oven. Once done remove from the oven and let rest for 5 minutes before cutting and serving.
