One thing I love about this recipe is that it is hearty without being heavy. The baking mix comes out light and fluffy, balancing out the meat nicely.
Cliff’s Easy One Pan Cheesy Ground Beef Pot Pie
An easy and hearty one pan hamburger dish that minimizes cleanup and turns out dinner in under an hour.

Ingredients
- 1 lb lean at least 80% ground beef
- 1 large onion chopped (1 cup)
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1 cup frozen mixed vegetables
- 1 cup shredded cheddar cheese 4 oz
- 1/2 cup Baking Mix
- 1 cup milk
- 2 eggs
Instructions
- Heat oven to 400°F
- In 10-inch cast iron skillet, cook beef and onion over medium heat 4 to 5 minutes, stirring occasionally.
- While the hamburger is cooking, heat frozen veggies in a microwave for about 2 minutes and then drain.
- Stir in sale, garlic powder, and drained vegetables. Cook 4-5 minutes more.
- While that is finishing cooking, whisk the baking mix, milk, and eggs together in a bowl.
- When the hamburger is done, turn off the heat and top with the cheese.
- Pour the baking mix evenly over the top of your hamburger and place in the oven for about 30 minutes, or until done.
- Let stand 10 minutes before serving.
I love easy meals made from scratch and this totally fits the bill. The only pre-made ingredient here is the baking mix and that is only half a sin in my book. This is mostly because pre-made baking mix is about the same price as doing it yourself and isn’t as full of extraneous ingredients as a lot of other processed foods. If you like though, you can substitute in your homemade all-purpose baking mix.
