Add the diced onion and cook for 2-3 minutes until softened.
Stir in the canned tomatoes, garlic powder, smoked paprika (if using), salt, and pepper. Let it simmer for 2 minutes—the tomatoes will reduce slightly.
Add the spinach and water or broth. Stir until the spinach wilts down (about 1-2 minutes), coating it in the turkey-tomato mix.
Remove from heat and serve hot.
